This is currently a known limitation of how the Builder draws runtime UI. The Builder itself is still just an EditorWindow and so it draws runtime UI using gamma, while the runtime may use gamma or linear. This will be addressed as a feature in a future version.

Steps to reproduce:
1. Open attached project “TextureMissmatch”
2. Observe in the Game view window the green bar and the gradient
3. Open Assets > TextureBug.uxml file
4. Observe the color of the green bar and the gradient

Actual results:
The added textures gradient is less noticable in Game view compared to UI Builders preview

Expected results:
Both Game view window and UI Builders Preview window displays the elements in a same way

Reproducible with versions:
6000.0.59f1, 6000.2.7f1, 6000.3.4b1, 6000.4.0a1

Tested on (OS):
MacOS Sequoia 15.6.1
