Fixed issue where older assets referencing URP materials have missing asset preview thumbnails.

How to reproduce:
1. Open the attached project "Prefabs_And_Testing.zip"
2. Open the Assets/PolygonDungeon/Prefabs/Characters folder

Expected results: Prefab thumbnails are shown in the Project window
Actual results: Prefab thumbnails are not shown in the Project window

Reproducible with: 2021.3.28f1, 2022.3.4f1, 2023.1.2f1, 2023.2.0a22

Reproducible on: Windows 10
