HSV color doesn't stay the same when it's changed

Color values are serialized as RGB which means that the exact HSV value might not be preserved in the conversion process. If HSV value preservation is needed for some custom process/system, it needs to be stored separately and then converted into a unity color value.

How to reproduce:
1. Open the attached project "ColorChoose.zip"
2. Select Assets/New Material.mat
3. Click on the Albedo color field in the Inspector window
4. Change to HSV color picker in the Color window
5. Change the "H" value to 200
6. Close the Color window
7. Repeat step 3

Expected results: The "H" value stays 200
Actual results: The "H" value is 180

Reproducible with: 2021.3.34f1, 2022.3.17f1, 2023.2.4f1, 2023.3.0b1

Reproducible on: Windows 10 22H2
Not reproducible on: No other environment tested
